Fugitive Motel

Our vision when Fugitive Motel was set up in June 2019, was to build a community focused food and drink brand that would put genuine choice and authentic hospitality at the heart of what we do.


Inspired by the spirit of U.S motels and mid-century design, Fugitive Motel is a multi-dimensional destination bar with striking personality.

The Team


The genesis of what would become Fugitive Motel developed over a number of years between Liam Tolan and David Burgess.

With two other old school friends, the pair would take annual trips away to the world’s best beer destinations. A quest for discovery, became a kooky obsession for the latest drinks trends, with ideas picked up from across Europe and the U.S helping to hone their vision.

The Founders are backed by a shareholder group who passionately share their vision.

Stefan Negura

Head Chef

Having spent 10 years working around the UK at rosette restaurants, Stefan came to London taking up Head Chef positions at first, Aubaine and then later with the Number 90 group. More recently in 2019, Stefan opened a fish restaurant in Marbella, before joining the Fugitive family in March 2020.


Jack Ellis

General Manager

With over a decade of experience working for some of the biggest pub and restaurant groups in the UK, Jack joined as General Manager in October 2019. Jack’s ‘guest obsessed’ approach to customer experience sees him go the extra mile for staff and guests alike.
